Let's get started!"

Ingredients for Diet-Friendly Grilled Chicken:

  • 2 chicken breasts

  • 1 large onion

  • 2 tbsp of brewed saffron

  • Salt and pepper to taste

  • 4 tbsp of olive oil

  • Garlic powder and paprika to taste

  • 5 large mushrooms

  • 1 large potato

  • 2 medium zucchinis

Step 1: Preparing the Vegetables First, wash the mushrooms, onion, potato, and zucchinis thoroughly. Set the mushrooms aside in whole pieces. Peel and finely slice the onion. Cut the zucchinis into uniform rings or strips. Take a small pot, fill it with water, and boil the potato just enough that it softens but remains firm to avoid crumbling when grilling.

Step 2: Preparing the Chicken Rinse the chicken with cold water, then split them from the center into two equal parts. Flatten them slightly using a meat mallet. For marination, add salt, pepper, brewed saffron, garlic powder, 2 tbsp of olive oil, and the previously sliced onions. Mix well, cover with plastic wrap, and refrigerate for at least 1 hour for flavors to meld.

Step 3: Grilling the Chicken Use a special grill pan and place the marinated chicken on it. Allow both sides to grill until they are golden brown. Sprinkle some paprika on the chicken during the last 5 minutes of grilling.

Step 4: Grilling the Vegetables Take the par-boiled potato, cut it into uniform slices, and season with a tablespoon of olive oil, salt, and pepper. Grill these potato slices in the same pan. In a separate bowl, combine zucchini slices and whole mushrooms. Season with salt, pepper, and 1 tbsp of olive oil, ensuring everything is well-coated. Grill them until they're nicely charred. Serve these

vegetables alongside the grilled chicken, and there you have it—your delicious diet-friendly saffron grilled chicken is ready to be enjoyed!

Bon appétit!
